Oma’s Apple Cake
-4 eggs (or an egg substitute, such as applesauce)
-1/2 cup oil (I used Carrington flavorless coconut oil)
-2 cups sugar
-2 cups flour
-1 tsp baking soda
-2 tsp vanilla
-1-1/2 cup ground nuts (walnuts or almonds – I used my little Ninja blender to ground the almonds)
-1 tsp cinnamon
-4 cups cut up apples (I removed the skin first)
Beat eggs, sugar, and oil.
Mix in flour, nuts, baking soda.
Mix in vanilla.
Fold in apples.
Bake at 350 degrees for 1 hour in a 13″ x 9″ greased pan.

What kind of apples did you use? Red? Green? Thank you for your weekly show. I love it! Good stuff!
Hi Lisa! I just used what I had on hand (some Granny Smith and Jonagold). I wouldn’t recommend using red apples because they don’t have a lot of flavor. Hope this helps!
